Pears: In an All Clad pot, place the wine, water, half a cup of sugar, lemon juice, and orange juice. Mix until all ingredients are combined. Set aside.
Peel the pears and cut them in half, place them in the previous mixture. Heat in the wine mixture for about 30 – 40 minutes, turning constantly. Let rest.
Roll out the tart dough until it is 5 millimeters thick and fit it into a T-Fal® 28 Tart Pan, prick the dough with a fork and bake for 15 minutes.
Filling: Place the heavy cream in a saucepan. Melt the semi-sweet chocolate and dark chocolate in a double boiler. Mix with a T-Fal® whisk until everything is combined. Place the eggs, ¼ cup of sugar, and vanilla extract in a bowl. Whisk for one minute. Pour this mixture over the baked tart crust. With a T-Fal® spatula, clean all sides of the bowl and mix. Pour the filling over the tart.
Place the tart in the preheated oven at 170º F.
Bake for 45 minutes.
Once out of the oven, let cool.
Garnish with the wine pears, which should be cut into slices.
