Heat the heavy cream along with the butter in a small pot over low-medium heat; remember that the cream should not boil. To achieve this, stir constantly with a whisk and monitor the temperature. Remove from heat.
Place the white chocolate in a bowl and pour the previous mixture over it while still hot. Using a plastic spatula, incorporate the ingredients until the chocolate is completely melted. Add the peanut M&M's® and finish incorporating. Pour the mixture into a deep, flat container, cover the ganache with plastic wrap, and refrigerate until the mixture solidifies.
While the balls are cooling, melt the semi-sweet chocolate in the microwave, giving it 15 seconds at a time and stirring constantly until the chocolate is melted. Set aside. Chop the peanut M&M's® and place them on a flat plate for decoration.
Take the ganache tray out of the refrigerator. Using a small ice cream scoop, scrape the chocolate ganache to form balls of approximately 30 grams, placing them on a tray lined with parchment paper and refrigerate again, just to firm them up. Remember to cover the chocolate balls with plastic wrap before refrigerating.
Take the cooling tray out of the fridge. Use your hands to take a truffle and shape it into a slightly more spherical form; don’t worry if they aren’t perfect. Dip the truffles in the melted chocolate, remove from the chocolate, and immediately cover with the chopped peanut M&M's®. Let the chocolate dry and enjoy.
