Chocolate Truffles with Peanut

  • 1 cup whipping cream, for the white ganache
  • 1 tablespoon butter, for the white ganache
  • 2 cups white chocolate, in small pieces, for the white ganache
  • 1/2 cups peanut m & m's®
  • 1 1/2 cups unsweetened semisweet chocolate, for melting
  • 2 cups peanut m & m's®, for decoration

  • Heat the heavy cream along with the butter in a small pot over low-medium heat; remember that the cream should not boil. To achieve this, stir constantly with a whisk and monitor the temperature. Remove from heat.
  • Place the white chocolate in a bowl and pour the previous mixture over it while still hot. Using a plastic spatula, incorporate the ingredients until the chocolate is completely melted. Add the peanut M&M's® and finish incorporating. Pour the mixture into a deep, flat container, cover the ganache with plastic wrap, and refrigerate until the mixture solidifies.
  • While the balls are cooling, melt the semi-sweet chocolate in the microwave, giving it 15 seconds at a time and stirring constantly until the chocolate is melted. Set aside. Chop the peanut M&M's® and place them on a flat plate for decoration.
  • Take the ganache tray out of the refrigerator. Using a small ice cream scoop, scrape the chocolate ganache to form balls of approximately 30 grams, placing them on a tray lined with parchment paper and refrigerate again, just to firm them up. Remember to cover the chocolate balls with plastic wrap before refrigerating.
  • Take the cooling tray out of the fridge. Use your hands to take a truffle and shape it into a slightly more spherical form; don’t worry if they aren’t perfect. Dip the truffles in the melted chocolate, remove from the chocolate, and immediately cover with the chopped peanut M&M's®. Let the chocolate dry and enjoy.
