60 grams bittersweet chocolate
120 grams semisweet chocolate
1 stick unsalted butter
1 cup sugar
3 eggs
1 teaspoon vanilla essence
1 cup flour
1/4 cups cocoa, powder
1/2 teaspoons baking powder
1 pinch salt
18 marshmallows, large white

Preheat the oven to 180 degrees Celsius. Prepare a baking tray with parchment paper.
Melt the chocolates and butter in a double boiler.
In an electric mixer, beat the sugar, eggs, vanilla, and melted chocolate.
In another bowl, mix the flour, cocoa, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients while continuing to mix.
Using a spoon, place dollops of the mixture on the tray to make 36 cookies, ensuring they are approximately 2 cm apart so they don't stick together.
Bake for 6 minutes or until they puff back up when pressed.
Remove the cookies from the oven and allow them to cool. Return half of the cookies to the tray, flipping them upside down.
Place a marshmallow on top of each of the cookies on the tray and return to the oven. Bake for 3 minutes.
Remove from the oven, let cool for 1-2 minutes, and cover with the other cookies.
