Brownies with Chocolate and Mint

  • 1 cup margarine, (200 g)
  • 200 grams dark chocolate
  • 2 eggs
  • 1 cup sugar, (200 g)
  • 1/2 teaspoons vanilla essence
  • 2/3 cups flour, (100 g)
  • 1/2 cups pecans, chopped (50 g)
  • 50 grams icing sugar
  • 1/2 cups whipping cream, (100 ml)
  • 250 grams bittersweet chocolate
  • 1/2 teaspoons peppermint

  • Preheat the oven to 180°C.
  • For the chocolate mint brownies: melt the chopped chocolate with the margarine in the microwave, in 15-second intervals.
  • Incorporate the eggs into the mixer and mix them at high speed. Gradually add the sugar and vanilla, and keep mixing.
  • Remove the chocolate from the microwave and mix very well.
  • Gradually add the chocolate to the mixer mixture. Incorporate the flour and the nuts.
  • Spray a little oil in a mold and add flour to cover it perfectly.
  • Pour the mixer mixture into the floured mold and distribute it evenly.
  • Bake for 30 minutes.
  • Remove from the oven and let cool.
  • Add the chopped chocolate to a glass container, heavy cream, and a few drops of mint essence.
  • Put in the microwave in 15-second intervals to melt the chocolate.
  • Remove from the microwave and mix well to form a ganache.
  • Unmold the brownie onto a board and drizzle with chocolate ganache. Spread the chocolate with the help of a spatula. Trim the edges of the brownie and cut into squares of approximately 5 x 5 centimeters. Decorate with raspberries for a pop of color.
