Ice Cream Brownie

  • 115 grams bittersweet chocolate, melted
  • 1 1/4 cups butter, melted
  • 1/2 cups raw sugar
  • 3 eggs
  • 2 teaspoons vanilla essence
  • 1 cup flour, sifted
  • 1/4 cups cocoa powder, sifted
  • 30 cubes cow's milk, frozen for the ice cream
  • 1 cup whipping cream, for the ice cream
  • 1 tablespoon vanilla essence, for the ice cream
  • 1 cup icing sugar, for the ice cream
  • 1 cup chocolate cookies, chopped
  • 3 cups whipped cream
  • 1/2 cups chocolate chips

  • Preheat the oven to 180° C.
  • Add dark chocolate and butter to a bowl until achieving a smooth mixture, add sugar, eggs, vanilla extract, flour, and cocoa. Mix very well.
  • Pour the mixture to form a thin layer into a greased mold, bake for 20 minutes. Cool and set aside.
  • Pour all the ice cream ingredients into the Vitamix® container in the order indicated, close the lid tightly, select speed 1, turn on the blender, and gradually increase the speed to 10 and then to high.
  • Use the tamper to direct the ingredients toward the blades, moving until it forms ice cream. Pour the mixture into a bowl and gradually mix in the cookies without fully integrating them into the ice cream.
  • Spread the ice cream over the brownie plate and freeze, spread whipped cream and sprinkle chocolate chips. Freeze until completely solid. Remove from the freezer, portion into equal squares, serve, and enjoy,
