White Chocolate Blondies

  • 150 milliliters Oléico® safflower oil
  • 60 grams raspberries
  • 1/2 cups brown sugar
  • 250 grams white chocolate, chopped
  • 3 eggs
  • 1 2/3 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla essence

  • Preheat the oven to 180° C. Grease a 20 x 30 cm pan approximately.
  • In a bowl, mix sugar, eggs, and vanilla. Beat.
  • Add the flour and baking powder, stir.
  • Add the oil and continue beating. Add the white chocolate.
  • Pour the mixture into the previously greased pan.
  • Place the raspberries in the microwave for 30 seconds or until soft. Mash them with a fork.
  • Pour the raspberries over the mixture, then use a fork to create a swirling pattern.
  • Bake for 20 minutes or until cooked.
  • Allow to cool completely.
