Heat water in a pot over medium heat, and when ready, place the chocolate in a bowl that fits the size of the pot and melt in a double boiler for 2 to 5 minutes.
Mix the amaranth, Smucker's® blueberry jam, and melted chocolate in a bowl until integrated. Let cool for 10 minutes.
Place the mixture on a board and shape it into the head of a skull. Let cool for 20 minutes or until it solidifies.
For the icing: Mix the powdered sugar, water, and lemon juice in a bowl with a spoon. Divide the mixture into 4 bowls and add different food colorings to each: blue, orange, green, and pink. Place in piping bags and set aside.
When your chocolate skull is solidified, decorate the eyes with orange color, place dots around the eyes to form the eye decoration, use pink to create lines on the forehead of the skull and on the sides of the eyes, also use pink for the nose, use blue for the teeth and some lines on the top of the head. Let cool for 5 minutes or until hardened.
