Chocolate Croquettes

An ideal recipe for chocolate lovers, of which there are many. We are going to enjoy chocolate in a slightly different but equally delicious way. Easier and quicker to make than the typical croquettes.

  • 250 grams chocolate, for melting
  • 200 grams clotted cream, liquid for whipping
  • 100 grams sugar

  • In a large saucepan, we heat the cream over medium heat. When it is nice and warm (without reaching a boil), we add the sugar, the chopped chocolate, and stir continuously until the chocolate melts and we get a thick and delicious cream.
  • We grease the base and the edges of the aluminum mold with a little butter and pour in the cream. We let it cool at room temperature and then put it in the refrigerator for 2 - 3 hours, the necessary time to be able to shape the croquettes without them sticking too much to our hands.
  • Once we shape the croquettes, we put them in the freezer for at least 1 day so that they are well chilled when we bread them and do not melt when frying.
  • Once frozen, we prepare the plates with the necessary ingredients for the breading, heat oil in a saucepan, and start breading the croquettes by first dipping them in flour, then in egg, and finally in breadcrumbs. If you find that they break while frying, you can do a double breading (repeat the breading in the same order). When the oil is hot, we add the croquettes, taking them out when they are nicely golden. It is advisable to take the croquettes out of the freezer and start breading them just when we have the oil hot so that they do not start to melt too quickly.
  • As they come out hot, we place them on a plate with absorbent paper to let the excess oil drain, and without letting them cool too much, but without burning ourselves, we can enjoy these delicious and different croquettes.
