Chocolate Custard

  • 500 milliliters cow's milk
  • 125 grams sugar
  • 1 tablespoon vanilla essence
  • 50 grams cornstarch
  • 2 egg yolks
  • 150 grams couverture chocolate, semisweet

  • Blend the milk, sugar, vanilla, cornstarch, and egg yolks.
  • Pour the mixture into a pot and cook over medium heat, stirring constantly with a whisk.
  • When it starts to thicken, lower the heat and continue whisking until you can see the bottom of the pot.
  • Finely chop the chocolate, add it to the hot custard, and stir until the chocolate is dissolved.
  • It can be consumed hot or very cold.
