Heat water in a pot over medium heat, place a bowl to create a double boiler and add the Conejos® chocolate. Stir constantly with a silicone spatula until the chocolate is completely melted. Set aside.
Add the mascarpone cheese to a bowl, gently whisk with a balloon whisk and pour in the melted chocolate. Then, while continuing to mix, add the vanilla extract, the previously hydrated and melted gelatin. Mix until well combined.
Pour a bit of the chocolate mixture into the glasses, alternating with pieces of chocolate cake and colorful sprinkles. Repeat the process until the glass is filled, decorate with whipped cream and Conejos®. Enjoy this chocolate dessert with conejos!
