Heat water in a pot over medium heat, place a bowl to create a double boiler and add the Conejos® chocolate. Stir constantly with a silicone spatula until the chocolate is completely melted. Set aside. Add the mascarpone cheese to a bowl, gently whisk with a balloon whisk and pour in the melted chocolate. Then, while continuing to mix, add the vanilla extract, the previously hydrated and melted gelatin. Mix until well combined.
