Chocolate Oat Muffins

Try these fluffy chocolate oatmeal muffins made with Quaker® Oats, which also have chocolate chips; they will add a special touch to this whole grain sweet bread!

  • 1 cup Quaker® oatmeal
  • 4 eggs
  • 1 cup coconut sugar, or zero-calorie sweetener
  • 1/4 cups coconut oil, melted
  • 1 3/4 cups bittersweet chocolate, 70% cocoa, melted
  • 1/2 cups chocolate chips, 70% cocoa
  • 1 teaspoon baking powder

  • Blend the Quaker® Oats for 5 minutes or until you obtain a fine flour. Set aside.
  • In a bowl, mix the eggs with the sugar for 5 minutes using a whisk. Add the coconut oil and melted chocolate, mixing with the whisk or a spatula. Gradually incorporate the flour and baking powder. Continue stirring until you achieve a thick batter. Finally, add the chocolate chips and mix gently.
  • Pour the mixture into a cupcake mold with liners, filling only ¾ of the capacity of the molds. Bake at 180 °C for 30 minutes.
  • Cool the chocolate oatmeal muffins on a wire rack and pair with coffee.
