Flourless Chocolate Cake

  • 1 1/2 cups bittersweet chocolate, chopped
  • 1 cup butter
  • 8 San Juan® eggs
  • 1 cup sugar
  • 50 grams cocoa
  • 1 teaspoon cardamom
  • 1/4 teaspoons salt
  • 1 tablespoon vanilla essence
  • 1 cup walnuts, finely chopped

  • Place the chocolate in a bowl and melt it in a double boiler. Add the butter, mix, and set aside.
  • Separate the egg whites from the yolks of the San Juan® Egg pieces. Beat the egg whites with the sugar until they double in size and become firm. Set aside.
  • In a bowl, use a whisk to mix the melted chocolate and the San Juan® Egg pieces until combined. Incorporate the cocoa, cardamom, salt, and vanilla essence until integrated. Gently fold in the egg whites.
  • Pour the previous mixture into a pre-greased and floured round mold. Top with walnuts and bake at 175 °C for 25 minutes. Let cool and set the cake aside.
  • Serve the chocolate cake and accompany it with a glass of milk.
