Place the chocolate in a bowl and melt it in a double boiler. Add the butter, mix, and set aside. Separate the egg whites from the yolks of the San Juan® Egg pieces. Beat the egg whites with the sugar until they double in size and become firm. Set aside. In a bowl, use a whisk to mix the melted chocolate and the San Juan® Egg pieces until combined. Incorporate the cocoa, cardamom, salt, and vanilla essence until integrated. Gently fold in the egg whites. Pour the previous mixture into a pre-greased and floured round mold. Top with walnuts and bake at 175 °C for 25 minutes. Let cool and set the cake aside. Serve the chocolate cake and accompany it with a glass of milk.
