Mini Cheesecakes Covered in Chocolate

What better dessert than these Mini Cheesecakes Covered in Chocolate! This easy dessert recipe is made with condensed milk and is decorated with a piece of chocolate-covered strawberry. A great tip for the strawberries to stick well to the cheesecake is to put a small layer of melted chocolate at the bottom, so they stay firm and fixed.

  • 2 cups vanilla cookies, Wafer or Suavicremas, crushed
  • 1/4 cups butter, melted
  • 2 cups cream cheese, at room temperature
  • 3/4 cups condensed milk
  • 1/2 cups icing sugar
  • 1 envelope unflavored gelatin powder, rehydrated and melted, 7 g
  • 1 cup dark chocolate, melted
  • 1/4 cups butter, melted
  • 1/2 cups whipping cream, hot
  • 2 cups strawberries

  • In a bowl, mix the cookies with the butter until combined and form a paste. Place the paste in cupcake molds, compress, and chill.
  • In another bowl, beat the cream cheese with the condensed milk and powdered sugar until a homogeneous mixture is obtained, gradually add the gelatin in a stream, pour the cheesecake mixture into the molds over the cookie base, and refrigerate until set. Unmold and set aside.
  • In another bowl, mix the chocolate with the butter and heavy cream until a homogeneous mixture forms. Cover the cheesecakes and refrigerate until firm.
  • With the leftover ganache, cover the strawberries and refrigerate until they harden. With a bit of fresh ganache, stick the strawberries onto the cheesecakes and refrigerate again. Remove and serve.
