2 cups vanilla cookies, Wafer or Suavicremas, crushed
1/4 cups butter, melted
2 cups cream cheese, at room temperature
3/4 cups condensed milk
1/2 cups icing sugar
1 envelope unflavored gelatin powder, rehydrated and melted, 7 g
1 cup dark chocolate, melted
1/4 cups butter, melted
1/2 cups whipping cream, hot
2 cups strawberries

In a bowl, mix the cookies with the butter until combined and form a paste. Place the paste in cupcake molds, compress, and chill.
In another bowl, beat the cream cheese with the condensed milk and powdered sugar until a homogeneous mixture is obtained, gradually add the gelatin in a stream, pour the cheesecake mixture into the molds over the cookie base, and refrigerate until set. Unmold and set aside.
In another bowl, mix the chocolate with the butter and heavy cream until a homogeneous mixture forms. Cover the cheesecakes and refrigerate until firm.
With the leftover ganache, cover the strawberries and refrigerate until they harden. With a bit of fresh ganache, stick the strawberries onto the cheesecakes and refrigerate again. Remove and serve.
