Chongos Zamoranos Flan

  • 1 cup sugar
  • 1/2 cups condensed milk
  • 3/4 cups evaporated milk
  • 1 cup cream cheese
  • 5 eggs
  • 1 cup chongos zamoranos
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla essence
  • obleas, with cajeta, for decoration
  • Mexican peanut brittle, for decoration

  • For the caramel, in a pan melt the sugar over medium heat for about 10 minutes and then pour it into a flan mold. Let it cool at room temperature.
  • Preheat the oven to 190 °C.
  • For the flan, blend the condensed milk with the evaporated milk, cream cheese, egg, chongos zamoranos, cornstarch, and vanilla.
  • Pour the mixture into the mold and cover it with aluminum foil. Bake in a water bath for 50 minutes at 190 °C. Let cool for 30 minutes and refrigerate for 1 hour.
  • Unmold the flan and decorate with wafers and pieces of palanqueta. Enjoy.
