Put 2 cups of water with sugar and cloves on the heat to make a syrup. Beat the egg yolks until frothy, add the sifted flour with the baking powder, always beating, the syrup (once cooled), dates, nuts, and egg whites beaten to stiff peaks.
Incorporate everything and pour the mixture into a loaf pan previously greased with plenty of butter and lined with parchment paper. Put it in the oven at 300º C and bake for half an hour; test with a straw or toothpick, if it comes out dry and the cake is slightly golden, take it out of the oven, flip it over, and carefully remove the paper.
Make a light syrup with 1/2 cup of sugar and a little water. Remove from heat and let cool, when it’s warm add 2 glasses of cognac or brandy to the almost cold cake, poke a few holes with a toothpick.
