Christmas Cake

Delicious cake for the Christmas season, made with fresh H-E-B products

  • 2 1/4 cups wheat flour, sifted 3 times
  • 4 cups walnuts
  • 4 cups pitted dates
  • 3/4 cups brown sugar, Hill Country Fare
  • 4 eggs, fresh
  • 3 tablespoons baking powder
  • 2 tablespoons clove, powdered

  • Put 2 cups of water with sugar and cloves on the heat to make a syrup. Beat the egg yolks until frothy, add the sifted flour with the baking powder, always beating, the syrup (once cooled), dates, nuts, and egg whites beaten to stiff peaks.
  • Incorporate everything and pour the mixture into a loaf pan previously greased with plenty of butter and lined with parchment paper. Put it in the oven at 300º C and bake for half an hour; test with a straw or toothpick, if it comes out dry and the cake is slightly golden, take it out of the oven, flip it over, and carefully remove the paper.
  • Make a light syrup with 1/2 cup of sugar and a little water. Remove from heat and let cool, when it’s warm add 2 glasses of cognac or brandy to the almost cold cake, poke a few holes with a toothpick.
