Ingredients

10 portions
  • 2 1/4 cups wheat flour, sifted 3 times
  • 4 cups walnut
  • 4 cups boneless date
  • 3/4 cups brown sugar, Hill Country Fare
  • 4 eggs, cool
  • 3 tablespoons baking soda
  • 2 tablespoons whole clove, powdered

Preparation

Put on the fire 2 cups of water with the sugar and the clove to make a honey. Beat the yolks to foam, add the sifted flour with the baking powder, always whisking, the honey (already cold), dates, nuts and egg whites whipped to nougat.
Incorporate everything and empty the mixture into a pancake mold previously greased with enough butter and lined with waxed paper. Put it in the oven at 300º C and cook it for half an hour; test with a straw or stick, if it comes out dry and the bread is lightly browned, remove it from the oven, turn and remove the paper carefully.
Make a light honey with 1/2 cup of sugar and a little water. Remove from heat and let cool, when it is warm add 2 glasses of cognac or brandy to the bread that will be almost cold, give a few pickets with a toothpick.
