Christmas Capirotada

Traditional Mexican dessert perfect for making during the Christmas season with H-E-B products.

  • 4 bolillo rolls, sliced
  • 2 cones piloncillo
  • 1/2 cups peanuts, Hill Country peeled
  • 1/2 cups raisins
  • 1 cup añejo cheese, cut into squares
  • 1 sprig cinnamon
  • 1 tablespoon colored dragee
  • vegetable oil, Economax brand

  • Boil the piloncillo with cinnamon in 2 cups of water to make a syrup.
  • Brown the slices of bread in oil and remove the excess fat by placing them on a paper towel.
  • In a pot, place a layer of bread slices, cover them with raisins, peanuts, and pieces of cheese; then add another layer of bread, raisins, peanuts, etc., and drizzle with the syrup.
  • Place the pot in a water bath for half an hour to soften the bread; sprinkle with colored sprinkles.
