Christmas Cupcakes

Delicious recipe for Christmas cupcakes. They are small cakes with festive frosting for decoration. They are perfect for kids but also great as a dessert at any holiday event.

  • 2 tablespoons baking powder, soda
  • 1 1/2 cups flour
  • 2 tablespoons ginger powder
  • 1 tablespoon cinnamon powder
  • 1 teaspoon clove, ground
  • 1 teaspoon nutmeg, ground
  • 1 teaspoon salt
  • 2 tablespoons yeast
  • 8 tablespoons butter
  • 1 cup brown sugar
  • 1 cup corn syrup, Karo
  • 2 eggs

  • Preheat the oven to 180 degrees Celsius.
  • Place 10 cupcake liners in a cupcake tray.
  • In a pot, bring 1 cup of water to a boil, and when it reaches room temperature, add the yeast and let it sit for 5-10 minutes.
  • In a deep bowl, mix the flour, spices, salt, and baking powder.
  • In a stand mixer using the dough hook, mix the butter until fluffy.
  • Add the brown sugar and continue mixing, then add the flour, baking powder, honey, and eggs.
  • Spoon the batter into the cupcake liners, filling each one 3/4 full (to allow space for rising).
  • Bake the cupcakes for 30 minutes or until a toothpick inserted comes out clean.
  • Remove from the oven and let cool before decorating with buttercream frosting.
