Christmas Panettone

  • 1 envelope yeast, 11 g
  • 1/2 cups water, warm
  • 1 cup dried fruit
  • 1/2 cups brandy
  • 4 cups flour
  • 1/2 cups sugar
  • 1 teaspoon salt
  • 3 eggs
  • 1/2 cups butter, melted
  • 1 tablespoon honey
  • 1 tablespoon orange zest
  • 1/4 cups chocolate chips
  • 3 tablespoons butter
  • 1 egg, for brushing
  • icing sugar, for presentation

  • Preheat the oven to 180°C.
  • Hydrate the yeast with water, let it rest for 10 minutes. Set aside.
  • In a bowl, mix the dried fruits with brandy and let macerate for 30 minutes.
  • In a bowl, mix the flour with sugar, salt, hydrated yeast, and egg, knead for 10 minutes until you obtain a homogeneous dough.
  • Add the butter, honey, and orange zest, knead until you achieve a smooth and firm consistency.
  • On a floured surface, roll out the dough, add the macerated fruits, chocolate chips, and fold it in a way that they integrate.
  • Place the dough in a greased bowl and let it ferment for 1 hour or until it doubles in size.
  • On a floured surface, place the dough and remove excess air.
  • Place it on a deep steel pot, let it ferment for another 30 minutes and brush with egg. Make a cross cut with a sharp knife and insert 3 tablespoons of butter into the cross; bake for 40 minutes.
  • Unmold and decorate with powdered sugar, walnuts, and a ribbon around it.
