  • 125 grams flour , for the first dough

  • 2 egg yolks, for the second dough
  • 1 egg white, for the second dough
  • 1/2 teaspoons salt , for the second dough
  • 75 grams sugar , for the second dough
  • 250 grams flour , for the second dough
  • 85 grams unsalted butter , softened for the second dough
  • 85 grams water, for the second dough
  • 10 grams yeast, fresh for the second dough
  • 1 tablespoon orange blossom water, for the second dough

  • First dough: Slightly heat the water in the microwave for about seven seconds and dissolve the crumbled yeast in it. Add the flour. Set aside in a bowl and let it rise until it at least doubles in volume (you can do this the night before if you want).
  • Second dough: Slightly heat the water in the microwave (about seven seconds) and dissolve the crumbled yeast in it.
  • Beat all the ingredients well except the flour along with the first dough or sourdough that we will have reserved.
  • In a bowl, sift the flour, make a well, and add the dough we just prepared.
  • It’s time to add the chocolate chips and whatever else we want inside our panettone.
  • Place in the mold or molds where we will bake them and let them rise and triple in volume.
  • Before baking, brush our panettone with butter. Bake at 180 ºC for 40 minutes.
