Pavlova is a meringue cake named after the Russian ballerina Anna Pavlova, known for its incredible flavor and deliciously crunchy exterior with a soft interior. Additionally, the contrast with red fruits makes it the perfect showstopper.
Whip the San Juan® egg whites until they double in volume, gradually adding the sugar until fully combined.
Add the cornstarch, beat for 3 more minutes, then add the white vinegar and vanilla extract.
Pour the meringue into a piping bag with a plain tip, place the meringue on a baking sheet lined with parchment paper, forming 2 circles of 20 cm in diameter; bake for 1 hour or until the meringue is crunchy on the outside and slightly soft on the inside.
For the filling, beat the cream cheese with the powdered sugar and lemon zest until creamy. Set aside.
Using a piping bag with a star tip, place the filling over a meringue base, add the jam, the red fruits, and cover with another meringue. Decorate with more cream, jam, fruit, and fresh mint.
