Christmas Pavlova

Pavlova is a meringue cake named after the Russian ballerina Anna Pavlova, known for its incredible flavor and deliciously crunchy exterior with a soft interior. Additionally, the contrast with red fruits makes it the perfect showstopper.

  • 150 grams San Juan® egg whites, (5 pieces)
  • 250 grams sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla essence
  • 190 grams cream cheese
  • 1/4 cups icing sugar
  • 1 tablespoon lemon zest
  • 1/2 cups red fruit jam
  • 1 cup raspberries
  • 1 cup blackberries
  • 1 cup blueberry
  • peppermint, for decoration

  • Preheat the oven to 130°C.
  • Whip the San Juan® egg whites until they double in volume, gradually adding the sugar until fully combined.
  • Add the cornstarch, beat for 3 more minutes, then add the white vinegar and vanilla extract.
  • Pour the meringue into a piping bag with a plain tip, place the meringue on a baking sheet lined with parchment paper, forming 2 circles of 20 cm in diameter; bake for 1 hour or until the meringue is crunchy on the outside and slightly soft on the inside.
  • For the filling, beat the cream cheese with the powdered sugar and lemon zest until creamy. Set aside.
  • Using a piping bag with a star tip, place the filling over a meringue base, add the jam, the red fruits, and cover with another meringue. Decorate with more cream, jam, fruit, and fresh mint.
