Christmas Snow Globe Cake

  • 8 eggs
  • 2 cups granulated sugar
  • 2 cups flour
  • 1 cup almond powder
  • 2 teaspoons vanilla essence
  • 380 grams cream cheese, for the frosting
  • 1/2 cups icing sugar
  • 2 tablespoons coconut cream
  • shredded coconut
  • 1 ice cream cone, for ice cream
  • 1 tablet white chocolate, 50 g
  • 1/2 cups royal icing, green
  • 50 grams fondant, green
  • 200 grams fondant, white
  • 50 grams fondant, red

  • Preheat the oven to 180°C.
  • Beat the eggs with the sugar until they double in volume. Add the flour, almond powder, and gently incorporate, then add the vanilla essence.
  • Pour the mixture into a mold and bake for 18 minutes. Let it cool and set aside.
  • For the frosting, cream the cheese in the mixer and add the powdered sugar and coconut essence. Set aside
  • On the base of the cake, spread a little cream and place the other cake on top, cover the entire cake with the remaining frosting and sprinkle coconut all over the cake.
  • For the Christmas tree, cover the ice cream cone with white chocolate and let it dry.
  • Meanwhile, mix the powdered sugar with lemon juice and green food coloring. Place it in a piping bag with a star tip, and decorate the ice cream cone until completely covered, adding colored fondant balls.
  • For the snowman, form two balls of white fondant and stick them together with water, for the scarf cut a rectangle, shape it and stick it around, for the buttons use a little black food coloring and with a toothpick draw the buttons, do the same for its face.
  • For the star, roll out some white fondant and use a star cutter to cut it out.
  • To assemble, place the Christmas tree on top of the cake and the snowman beside it, place the fishbowl on top, and sprinkle with shredded coconut.
