Christmas Sugar Cookies

  • 1 cup butter, (226 g)
  • 1 cup sugar, (220 g)
  • 1/2 teaspoons almond essence
  • 1 egg
  • 2 1/3 cups flour
  • 1/2 teaspoons baking soda
  • 1/2 cups icing sugar, for the icing
  • 1 tablespoon lime juice, for the icing

  • Preheat the oven to 190°C. Grease and flour a baking sheet.
  • Add the butter, sugar, vanilla extract, and egg to your Vitamix® container in that order and close with the lid.
  • Select the lowest setting and turn on the blender, gradually increase the speed to 6 and blend for 20 seconds.
  • Incorporate the dry ingredients and pulse 15 times at speed 5 or until the dough is well combined, scraping the sides of the container if necessary to ensure everything is incorporated. Pour onto a work surface and use your hands to finish kneading until you have a smooth dough.
  • Wrap the dough in plastic wrap and refrigerate for 30 minutes. Roll out on a floured surface and cut with cookie cutters.
  • Place the cookies on the baking sheet and bake for 8 minutes. Cool.
  • For the icing, mix the powdered sugar with lemon juice and milk until you achieve a semi-thick icing. Place in a piping bag with a plain tip.
  • Decorate the cookies with the icing and edible pearls, let dry and serve.
