  • Preheat the oven to 170° C
  • For the cookie dough, beat the butter with the sugar until combined, add the egg, the yolk, and beat until incorporated. Add the vanilla extract, flour, and salt, and continue beating until the ingredients are well combined.
  • Remove the dough from the mixer and divide it into two parts. Set aside the natural color part and add green vegetable dye to the other half to color it. Let both doughs rest in the refrigerator for 40 minutes until firm, wrapped in non-stick plastic.
  • On a smooth, floured surface, roll out the green cookie dough to a thickness of 3 mm, using a tree-shaped cutter to cut out shapes and set aside. Roll out the natural dough and cut larger circles than the trees. Use the same tree cutter to hollow out the center of the circles and insert the green trees into the space.
  • Arrange the cookies on a baking sheet lined with parchment paper and refrigerate again until very firm. Bake for 8 to 10 minutes, remove from the oven, and cool.
  • In a bowl, place the white chocolate and melt it in the microwave in 30-second intervals, stirring constantly to prevent burning. Cover the edges of the cookies in white chocolate, refrigerate for a few seconds, and adhere the sprinkles to the cookie; refrigerate again until fully set.
  • Serve the cookies and accompany with a bit of milk.
