4 tablespoons sherry
3 cups flour
1 tablespoon yeast
1 teaspoon salt
1 tablespoon anise seeds
1 cup butter
1 tablespoon cinnamon powder

Preheat the oven to 180 degrees Celsius and grease the baking sheets with Pam or butter.
In a deep bowl, mix 2/3 cup of sugar, the sherry, the orange essence, and let it rest.
In another bowl, mix the flour, baking powder, anise seeds, and salt.
In an electric mixer, beat the butter until fluffy.
Combine the butter, the flour mixture, and the sugar mixture and knead until you have a uniform dough.
On a clean surface with a little flour, flatten the dough and cut out cookies in Christmas shapes. Transfer the cookies to the baking sheet.
Combine cinnamon and 1/4 cup of sugar in a small bowl.
Brush the cookies with the beaten egg and sprinkle the sugar and cinnamon mixture.
Bake for 8 to 10 minutes until the cookies begin to brown.
Remove the cookies from the oven and let cool for 5 minutes, serve.
