Preparation
Preheat the oven to 180 degrees centigrade and grease the baking trays with butter or pam.
In a deep bowl, mix 2/3 of a cup of the sugar, the sherry, the essence of orange, and put to rest.
In another bowl, mix the flour, the yeast, the anise seeds and the salt.
In an electric mixer beat the butter until fluffy.
Combine the butter, the flour mixture and the sugar mixture and knead until you have a uniform dough.
On a clean surface with a little flour flatten the dough and make cookies with Christmas shapes. Transfer the cookies to the baking sheet.
Combine cinnamon and 1/4 cup sugar in a small bowl.
Paint the cookies with the beaten egg and sprinkle the mixture of sugar and cinnamon.
Bake 8 to 10 minutes until the cookies begin to brown.
Remove the cookies from the oven and let cool for 5 minutes, serve.
