Cinnamon Pudding with Cauliflower Bits

Prepare this delicious pudding made from coconut milk, sweetened with condensed milk and flavored with a touch of cinnamon. The most surprising part is that it has pieces of cauliflower that make an incredible textures game. Excellent option to prepare a dessert, taking care of your carbohydrate intake.

  • 1 cup coconut milk
  • 1/2 cups condensed milk
  • 1/2 cups sugar
  • 1/2 tablespoons cinnamon powder
  • 6 tablespoons cornstarch, dissolved in a little water
  • 2 cups Eva® cauliflower bits
  • raspberries, to decorate

  • Heat a pot over medium heat with coconut milk, condensed milk, sugar and cinnamon powder. Cook until it boils and add the starch dissolved in water.
  • While stirring, simmer about 10 minutes or until thick. Add the Cauliflower Eva® Bits and cook 5 more minutes. Chill and refrigerate 30 minutes.
  • Serve and decorate with raspberries, cinnamon powder and tulip dough.
