Cinnamon Pudding with Cauliflower Bits

Prepare this delicious pudding made with coconut milk, sweetened with condensed milk and flavored with a hint of cinnamon. The most surprising part is that it contains bits of cauliflower, creating an incredible texture contrast. An excellent option for preparing a dessert while watching your carbohydrate intake.

  • 1 cup coconut milk
  • 1/2 cups condensed milk
  • 1/2 cups sugar
  • 1/2 tablespoons cinnamon powder
  • 6 tablespoons cornstarch, dissolved in a little water
  • 2 cups Eva® cauliflower bits
  • raspberries, for decoration

  • Heat a small pot over medium heat with coconut milk, condensed milk, sugar, and powdered cinnamon. Cook until it comes to a boil and add the dissolved cornstarch in water.
  • Stirring constantly, simmer for about 10 minutes or until it thickens. Add the Eva® Cauliflower Bits and cook for 5 more minutes. Cool and refrigerate for 30 minutes.
  • Serve and decorate with raspberries, powdered cinnamon, and tulip pastry.
