100 grams butter
3/4 cups sugar
1 egg
1 egg yolk
2 teaspoons vanilla essence
1 cup flour
1 teaspoon baking powder
1 cup cornstarch
350 grams dulce de leche

In a deep bowl, mix room temperature butter and sugar with a wooden spoon.
Add the egg, egg yolk, and vanilla, and mix to obtain a uniform dough.
Gradually add the flour, cornstarch, and baking powder, and continue mixing.
The dough should be soft but not sticky to the sides (you can add a little more flour if necessary).
Place the dough in a baking dish and let it rest in the refrigerator for at least 4 hours, preferably one day.
Remove the dough from the refrigerator and let it sit for 10 minutes at room temperature.
With a rolling pin, roll out the dough until it is approximately 1 cm thick and cut out circles using a cookie cutter.
Preheat the oven to 250 degrees Celsius.
On a baking tray, place the cookies and bake for 5 minutes.
Take each cookie, add a tablespoon of dulce de leche, and place another cookie on top (like a sandwich).
