This version of scribble cookies is delicious and easy to prepare. A delicious butter sandwich cookie filled with creamy dark chocolate ganache and topped with more chocolate, irresistibly tasty.
2/3 cups butter, (125 g) cubed, at room temperature
1 cup bittersweet chocolate, for the ganache)
1/2 cups whipping cream, hot (for the ganache)
1 cup bittersweet chocolate, melted, for decorating and coating
1/4 cups white chocolate, for decoration

Preheat the oven to 180° C, grease a baking tray.
Make a mound of flour and place the sugar, salt, egg, and vanilla in the center. Dissolve with your fingers and add the butter, mixing well. Refrigerate the dough for 15 minutes.
Roll out on a floured surface and cut the cookies with a cutter.
Place the cookies on a baking tray and bake for 15 minutes or until golden brown, then cool.
For the ganache, heat the heavy cream and mix with the chocolate until combined.
Make cookie sandwiches with the filling and decorate half of the cookies with dark chocolate, refrigerate for 10 minutes, and serve.
Cover the rest of the cookies with dark chocolate and decorate them with white chocolate. Refrigerate for 10 minutes and serve.
