Classic and Coated Scribble Cookies

This version of scribble cookies is delicious and easy to prepare. A delicious butter sandwich cookie filled with creamy dark chocolate ganache and topped with more chocolate, irresistibly tasty.

  • 1 2/3 cups flour
  • 1/2 cups sugar
  • 1/2 teaspoons salt
  • 1 egg
  • 1 teaspoon vanilla essence
  • 2/3 cups butter, (125 g) cubed, at room temperature
  • 1 cup bittersweet chocolate, for the ganache)
  • 1/2 cups whipping cream, hot (for the ganache)
  • 1 cup bittersweet chocolate, melted, for decorating and coating
  • 1/4 cups white chocolate, for decoration

  • Preheat the oven to 180° C, grease a baking tray.
  • Make a mound of flour and place the sugar, salt, egg, and vanilla in the center. Dissolve with your fingers and add the butter, mixing well. Refrigerate the dough for 15 minutes.
  • Roll out on a floured surface and cut the cookies with a cutter.
  • Place the cookies on a baking tray and bake for 15 minutes or until golden brown, then cool.
  • For the ganache, heat the heavy cream and mix with the chocolate until combined.
  • Make cookie sandwiches with the filling and decorate half of the cookies with dark chocolate, refrigerate for 10 minutes, and serve.
  • Cover the rest of the cookies with dark chocolate and decorate them with white chocolate. Refrigerate for 10 minutes and serve.
