Add the flour, sugar, cold butter, and a pinch of salt to enhance the flavor in a food processor. Process until all the ingredients for the tart dough are combined.
Add a splash of cold water and process again until the dough forms; it should not be sticky or too soft. Once the dough is ready, cover it and refrigerate for 30 minutes.
Place the peeled and cored apples in a bowl, then add the juice of 5 lemons, sugar, cinnamon to taste, brown sugar, vanilla extract, nutmeg, and mix very well.
Melt the butter in a skillet, add the flour and hot milk to thicken our filling mixture for the tart.
Add brown sugar and white sugar and cook for 3 minutes, then add the apples to the skillet to combine all the ingredients, and finally add the chopped walnuts and blueberries. Let cool to fill the apple tart.
Roll the dough out 2 centimeters larger than the pan, so it has the same thickness all around.
Place the dough into our tart pan, covering the base and sides.
Fill the dough with the apple mixture and form the top with strips of 1.5 cm thickness interwoven to show some of the filling.
Brush the top of the apple tart with egg, bake for 25 minutes at 180° C or until our tart is lightly golden and crispy. Let cool, cut a slice, and serve.
