Classic Birthday Cake

There is no party complete without a good cake. This birthday cake is delicious with vanilla frosting and a fluffy sponge cake. It can be cut into layers as desired. Kids love it.

  • 1 cup unsalted butter , at room temperature
  • 2 1/2 cups flour
  • 1/2 teaspoons baking powder
  • 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 1/2 cups sugar
  • 2 eggs
  • 3 egg yolks
  • 2 teaspoons vanilla essence
  • 1 cup cow's milk
  • vanilla frosting, for decoration

  • Preheat the oven to 180 degrees or 350°F. Grease 2 equal round cake pans and flour them.
  • In a mixer, beat the butter and sugar until light and fluffy. With the mixer running, add the eggs and yolks one at a time. Add the vanilla.
  • Gradually add portions of the flour, mixing with parts of the milk until the flour is finished. Stir until everything is incorporated.
  • Divide the mixture between the two pans and bake for about 33-35 minutes or until a toothpick inserted into the cake comes out clean. Remove from the oven and let cool for 10 minutes on a rack outside the pan.
  • Place one cake upside down (with the flattest side facing up) and spread frosting on it. Then place the other cake (with the flat side touching the other flat side) and cover the entire cake with frosting using a spatula.
  • Decorate to your liking with strawberries, colored frosting, candles, etc.
