Classic Lemon Pie with Meringue

A classic pastry that everyone loves, the classic lemon pie with meringue is so delicious that you won't be able to stop eating it. Enjoy it with a glass of cold milk.

  • 2 cups María cookies, (for the crust)
  • 1/2 cups butter, melted (for the crust)
  • 1 can condensed milk, (for the filling)
  • 1/2 cups lime juice, (for the filling)
  • 4 egg yolks, mixed (for the filling)
  • 4 eggs, (for the meringue)
  • 3/4 cups sugar, (for the meringue)

  • For the Crust: In a bowl, mix the crushed cookies with the melted butter. Press this mixture into the bottom and sides of a pie pan. Bake in a preheated oven at 350ºF (180ºC) for 15 minutes. Remove from the oven and let cool.
  • For the Filling: Mix the condensed milk with the lemon juice and the egg yolks. Pour over the cookie crust and return to the oven for 15 more minutes. Remove from the oven and let cool.
  • For the Meringue: Beat the egg whites until frothy. Gradually add the sugar and continue beating until stiff peaks form.
  • Spread the meringue on top of the pie. Use a fork or spoon to create peaks with the meringue. Return to the oven until the meringue is lightly browned.
