Classic tiramisu

  • 5 eggs, separated into egg whites and yolks
  • 1/3 cups sugar
  • 2 packages mascarpone cheese, (226 gc / u)
  • 40 ladyfingers
  • 1/2 cups espresso coffee
  • 2 tablespoons wine, sweet Marsala
  • 1/2 cups cocoa, in powder, to decorate

  • For the mascarpone cream, beat the egg yolks with the sugar until they sponge and mix with the mascarpone cheese in an enveloping form. Reservation.
  • On the other hand, whisk the egg whites to the point of nougat and mix envelopingly with the yolks and cheese.
  • Soak the soletas in the coffee combined with the sweet wine (optional) and form a base in a refractory. Cover with mascarpone cheese mixture and repeat forming layers.
  • Refrigerate about 1 hour, decorate with cocoa powder and serve.
