  • 5 eggs, separated into whites and yolks
  • 1/3 cups sugar
  • 2 packages mascarpone cheese, (226 g each)
  • 40 ladyfingers
  • 1/2 cups espresso coffee
  • 2 tablespoons wine, sweet Marsala
  • 1/2 cups cocoa, powder, for decoration

  • For the mascarpone cream, beat the egg yolks with the sugar until fluffy and gently mix in the mascarpone cheese. Set aside.
  • On the other hand, beat the egg whites until stiff peaks form and gently fold in with the egg yolks and cheese.
  • Soak the ladyfingers in the coffee combined with sweet wine (optional) and create a base in a baking dish. Cover with the mascarpone cheese mixture and repeat to form layers.
  • Refrigerate for about 1 hour, decorate with cocoa powder, and serve.
