3 coconuts, freshly peeled and grated with the fine side of the grater

Start by preparing the syrup by cooking water and sugar in a pot over medium heat. Squeeze in the lemon juice and boil until a honey-like consistency is achieved.
Add the grated coconut to the syrup and cook over medium heat for 30 minutes. Stir the coconut with a wooden spoon throughout the cooking process.
After 30 minutes, check if it's ready by moving the coconut with the spoon; if you can see the bottom of the pot, it's done.
Remove from the pot and place in a glass bowl, then put it in the freezer for 20 minutes to cool.
Take them out of the freezer and form balls with your hands.
