Coconut Cookies

These Coconut Cookies are made with a delicious dough that gives them a tropical flavor.

  • 2 3/4 cups flour
  • 1 tablespoon baking powder
  • 1/2 tablespoons salt
  • 1 cup unsalted butter , (2 bars)
  • 1 cup sugar
  • 1 egg
  • 2 tablespoons cow's milk
  • 1 tablespoon vanilla essence
  • 1 1/2 cups grated sweet coconuts

  • Preheat the oven to 180 degrees Celsius.
  • In a deep bowl, beat the flour, baking powder, and salt.
  • In another deep bowl, use an electric mixer to beat the butter and sugar until the mixture is fluffy. Add the eggs, milk, and vanilla, and reduce the speed to low to add the flour.
  • Once the dough is well mixed, add the coconut and finish kneading with your hands.
  • Take two greased baking sheets and use a spoon to make round cookies with the dough.
  • Bake the cookies for 15 minutes or until they are slightly golden.
  • Remove the cookies from the oven and use a spatula to transfer the cookies to a rack to cool.
