Coconut Ice Cream

  • 4 eggs
  • 200 grams sugar
  • 3/4 liters cow's milk
  • 1 tablespoon cornstarch , cornstarch
  • 1 teaspoon coconut essence
  • 500 grams grated sweet coconuts
  • 200 grams whipping cream
  • 3 egg whites

  • Boil the milk with the sugar and the grated coconut.
  • Dissolve the cornstarch in a little cold milk and add it to the boiling milk; cook for one more minute, stirring constantly, and remove from heat.
  • Add the lightly beaten egg yolks, mixing constantly, return to heat, and remove before it boils.
  • Let cool, flavor with coconut essence, add the thick whipped cream, combined with the egg whites beaten to stiff peaks.
  • Place in the freezer until it reaches the right consistency.
