200 grams sugar
3/4 liters cow's milk
1 tablespoon cornstarch , cornstarch
1 teaspoon coconut essence
500 grams grated sweet coconuts
200 grams whipping cream
3 egg whites

Boil the milk with the sugar and the grated coconut.
Dissolve the cornstarch in a little cold milk and add it to the boiling milk; cook for one more minute, stirring constantly, and remove from heat.
Add the lightly beaten egg yolks, mixing constantly, return to heat, and remove before it boils.
Let cool, flavor with coconut essence, add the thick whipped cream, combined with the egg whites beaten to stiff peaks.
Place in the freezer until it reaches the right consistency.
