These delicious sugar and coffee cookies are very easy to make. The recipe can be made more gourmet by dipping the cookies in melted chocolate in a double boiler.

Preheat the oven to 150 degrees Celsius.
In a deep bowl, dissolve the coffee in the hot water.
In another deep bowl, beat the butter, sugar, and vanilla with an electric mixer. Add the flour and the coffee mixture and beat until a dough is obtained.
Cover the dough with plastic wrap and refrigerate for 1 hour.
On a clean surface with flour, use a rolling pin to flatten the dough to obtain a sheet of dough 0.5 cm thick.
Cut into rectangles and place them on a previously greased baking sheet.
Bake for 8 minutes or until lightly golden. Remove from the oven and cool for 10 minutes.
