Coffee Cookies

These delicious sugar and coffee cookies are very easy to make. The recipe can be made more gourmet by dipping the cookies in melted chocolate in a double boiler.

  • 2 sticks butter
  • 1 tablespoon coffee, powder
  • 1 tablespoon water, boiling
  • 3/4 cups sugar
  • 1 tablespoon vanilla essence
  • 2 1/4 cups flour
  • 150 grams semisweet chocolate, melted in a double boiler (optional)

  • Preheat the oven to 150 degrees Celsius.
  • In a deep bowl, dissolve the coffee in the hot water.
  • In another deep bowl, beat the butter, sugar, and vanilla with an electric mixer. Add the flour and the coffee mixture and beat until a dough is obtained.
  • Cover the dough with plastic wrap and refrigerate for 1 hour.
  • On a clean surface with flour, use a rolling pin to flatten the dough to obtain a sheet of dough 0.5 cm thick.
  • Cut into rectangles and place them on a previously greased baking sheet.
  • Bake for 8 minutes or until lightly golden. Remove from the oven and cool for 10 minutes.
