Coffee Cookies

These delicious sugar and coffee cookies are very easy to make. The recipe can be made more gourmet by immersing the cookies in melted chocolate in a bain-marie.

  • 2 sticks butter
  • 1 tablespoon coffee, powdered
  • 1 tablespoon water, boiling
  • 3/4 cups sugar
  • 1 tablespoon vanilla essence
  • 2 1/4 cups flour
  • 150 grams semisweet chocolate, melted in a bain-marie (optional)

  • Preheat the oven to 150 degrees Celsius.
  • In a deep bowl dissolve the coffee in the hot water.
  • In another deep bowl whisk butter, sugar and vanilla with an electric mixer . Add the flour and the coffee mixture and beat until you get a dough.
  • Cover the dough with sticky paper and refrigerate for 1 hour.
  • On a clean surface with flour, use a roller to flatten the dough to obtain a 0.5 cm dough sheet.
  • Cut rectangles and place them in a greased baking tray.
  • Bake for 8 minutes or until lightly browned. Remove from the oven and cool for 10 minutes.
