Coffee Flan Cupcakes

This recipe is a delicious coffee flan cupcake dessert. Ideal for the whole family, but not very recommended for children due to its coffee content (caffeine). This delicious cupcake is a perfect dessert for a nice meal.

1 can condensed milk, sweetened
3 eggs, large
2 teaspoons vanilla essence
1 can evaporated milk
1 tablespoon instant coffee, pure

Preheat the oven to 350ºF.
Place aluminum foil in a 12-cup cupcake pan; spray with cooking spray.
Combine sweetened condensed milk, eggs, and vanilla extract in a medium bowl; mix very gently.
Place the evaporated milk in a medium microwave-safe bowl; heat in the microwave for 30 seconds.
Dissolve the coffee granules in warm milk.
Gradually add the milk mixture to the egg mixture.
Pour the mixture into the prepared cupcake liners (do not fill to the top).
Bake for 30 to 35 minutes or until a knife inserted in the center of the cupcakes comes out clean.
Start checking if they are ready at 30 minutes.
Remove the cupcakes from the oven. Let cool on a metal rack and refrigerate for 4 hours or overnight.
