Coffee Flan Cupcakes

This recipe is a delicious coffee flan cupcake dessert. Ideal for the whole family, but not very recommended for children due to its coffee content (caffeine). This delicious cupcake is a perfect dessert for a nice meal.

  • vegetable spray for cooking, nonstick
  • 1 can condensed milk, sweetened
  • 3 eggs, large
  • 2 teaspoons vanilla essence
  • 1 can evaporated milk
  • 1 tablespoon instant coffee, pure

  • Preheat the oven to 350ºF.
  • Place aluminum foil in a 12-cup cupcake pan; spray with cooking spray.
  • Combine sweetened condensed milk, eggs, and vanilla extract in a medium bowl; mix very gently.
  • Place the evaporated milk in a medium microwave-safe bowl; heat in the microwave for 30 seconds.
  • Dissolve the coffee granules in warm milk.
  • Gradually add the milk mixture to the egg mixture.
  • Pour the mixture into the prepared cupcake liners (do not fill to the top).
  • Bake for 30 to 35 minutes or until a knife inserted in the center of the cupcakes comes out clean.
  • Start checking if they are ready at 30 minutes.
  • Remove the cupcakes from the oven. Let cool on a metal rack and refrigerate for 4 hours or overnight.
