Floating Islands
They are beaten egg balls cooked in a preparation of sweet milk that, once cooked, are placed on a tray or baking dish and spread with thick, sweet cooked milk with a yellow color, and left in the refrigerator until they cool and harden a bit.

1 can condensed milk
3 egg whites
3 egg yolks
2 tablespoons cornstarch
3 cups cow's milk , or water
8 tablespoons sugar , for the caramel
2 tablespoons water, for the caramel
Preparation

Place the condensed milk and the milk in a saucepan over heat.
Beat the egg whites until stiff peaks form.
Spoon the meringue into the hot milk.
Cook the meringue on both sides (the milk should simmer gently).
Remove them and let them drain. Prepare the rest of the meringue in the same way.
At the end of cooking the meringue, strain the milk through a sieve.
Add the beaten egg yolks and the cornstarch dissolved in a little water.
Let it cook until the cream thickens.
Place in cups and let cool.
Cover with the meringue.
Separately prepare the caramel and pour it over the meringue at the time of serving.
