Lemon Carlota Popsicles

  • 1 cup evaporated milk
  • 1 cup condensed milk
  • 1 cup cream cheese, in cubes, at room temperature
  • 1/3 cups lime juice
  • 2 tablespoons lime zest
  • 1 envelope unflavored gelatin powder, 7 g
  • vanilla cookies, crushed, for decoration
  • lime wheel, for decoration

  • Blend the evaporated milk, condensed milk, cream cheese, lemon juice, and lemon zest at medium speed. Pour in the previously hydrated and melted gelatin at the end.
  • Blend for 1 more minute to ensure everything is perfectly integrated.
  • Pour the carlota mixture into previously greased popsicle molds until full. Place the wooden sticks in the center.
  • Freeze the popsicles for 1 hour or until they have a firm consistency and can be unmolded.
  • Serve the lemon carlota popsicles on a plate and decorate with crushed cookies and lemon slices. Enjoy!
