Tricolor Popsicles

Refresh yourself this hot season with one of these three popsicles; you can choose the lemon popsicle, the horchata popsicle, or the hibiscus popsicle. They are very easy to make and to keep in your freezer for when you need a refreshing moment.

  • 500 milliliters lime juice, for the lemon ones
  • 1.5 milliliters water
  • 500 grams sugar
  • 100 grams chia seeds
  • 5 limes, cut into thin slices
  • 500 milliliters hibiscus flower concentrate, for the hibiscus ones
  • 1.5 milliliters water
  • 500 grams sugar
  • 150 grams cranberries
  • 500 milliliters horchata concentrate, unsweetened, for the horchata ones.
  • 1.5 milliliters water
  • 500 grams sugar
  • 20 grams cinnamon stick

  • Boil each concentrate with its respective ingredients for approximately 10 minutes over medium heat.
  • Let cool and pour into popsicle molds, insert the sticks, add blueberries, a cinnamon stick, sliced lemons, and place in the freezer for about 1 hour.
  • To unmold the popsicles, remove them from the freezer and in the sink, turn on the tap and let water run over the outside of the molds until the popsicle loosens by pulling it from the stick, slowly.
  • Remember that the fruits you add should be the ones that give flavor to each popsicle. Lemon and chia, hibiscus and blueberry, horchata and cinnamon.
