Cold Pineapple and Yoghurt Cake

  • 1 banana
  • 1 tablespoon orange juice, low in calories
  • 2 cups Greek yogurt, low in calories
  • 1/2 cups whipping cream
  • 2 tablespoons artificial sweetener
  • 1 teaspoon vanilla essence
  • 4 envelopes unflavored gelatin powder, 28 grams (rehydrated and melted)
  • 3 canned pineapple, sliced, cut in half
  • 1 1/2 cups canned pineapple, cut into cubes
  • 3 cups ladyfingers
  • 1/2 cups coconut, toasted

  • In a bowl, mash the banana, add the low-calorie orange juice, and set aside.
  • In a blender, blend the low-calorie Greek yoghurt, heavy cream, and add the sugar substitute, mashed banana, vanilla essence, and gelatin.
  • In a rectangular mold, place a layer of ladyfingers, place the pineapple slices on the sides of the mold. Pour a bit of the previous mixture and add the pineapple cubes. Add a bit more mixture and the rest of the pineapple. Cover with coconut, place ladyfingers on top, and refrigerate for 2 hours, or until set.
  • Cut a slice and serve.
