Cookies & Cream Ice Cream Cake

  • 450 grams bittersweet chocolate, melted
  • 3/4 cups butter, melted
  • 1/4 cups sweetener, bakeable
  • 1 teaspoon vanilla essence
  • 5 eggs
  • 3/4 cups cocoa powder
  • 3/4 cups flour
  • 1/2 cups walnuts, chopped
  • 1 Cookies & Cream Halo Top®
  • 1 cup cookies, chopped
  • 1/4 cups bittersweet chocolate, melted, for decoration

  • Preheat the oven to 200°C.
  • For the chocolate brownie, beat the melted chocolate with the butter, add the sweetener, vanilla, eggs, cocoa, flour, and nuts.
  • Pour the previous mixture into a previously floured and greased cake pan, bake for 25 minutes. Let it cool very well.
  • Place the Cookies & Cream Halo Top® ice cream on the chocolate base, using a spatula to spread the ice cream, freeze for 30 minutes.
  • Unmold the cake and decorate with chopped cookies and chocolate.
