Mix the milk, two cups of cream, ground cinnamon, and the cinnamon stick. Heat over low heat until it boils.
Beat the egg yolks and blanch with the sugar. Then add the remaining cream.
Remove the milk mixture from the heat, let it cool slightly, and add the egg mixture, heating it over low heat for 5 minutes, remove from heat and take out the cinnamon sticks.
Let it cool a bit at room temperature and then put it in the freezer or ice cream maker.
