Homemade Watermelon Snow

  • 1/2 watermelons
  • 1/2 cups pomegranate syrup, (red syrup or grenadine)
  • 1/2 cups simple syrup
  • 1/2 cups sugar
  • 1 tablespoon lime zest
  • 1 tablespoon unflavored gelatin powder, hydrated and melted

  • Blend the pulp of the watermelon in a blender until it becomes juice and strain. Reserve.
  • In a pot, warm the watermelon juice, lemon juice, red syrup, sugar, lemon zest, and add the gelatin for just two minutes. It is very important that the mixture does NOT boil. Cool immediately and let it rest for 30 minutes.
  • Prepare a bowl with ice and water, adding enough salt. In another container, pour the watermelon mixture and place it over the ice to create an inverted bath; whisk constantly until it forms a snow-like consistency. Freeze.
  • Serve in a bowl, garnish with mint leaves, and sprinkle a little chili powder if desired.
