Mango Sorbet

  • 250 grams sugar
  • 375 milliliters water
  • 40 grams glucose syrup
  • 300 grams mango pulp

  • Put water, sugar, and glucose in a saucepan. Once it boils, remove it and let it cool.
  • Blend the mango and strain it through a fine sieve.
  • Mix the mango with the syrup and place it in a freezer-safe container.
  • Freeze it and blend it again every 30 minutes. Repeat until you achieve a sorbet-like consistency.
