Mix the milk, two cups of cream, mint extract, and food coloring. Heat on low until it boils.
Beat the yolks and blanch with the sugar. Then add the remaining cream.
Remove the milk mixture from the heat, let it cool slightly, and add the egg mixture, heating it on low for 5 minutes, then remove from heat and take out the cinnamon sticks.
Cool slightly at room temperature and then put it in the freezer or ice cream maker.
