The Best Green Tea Ice Cream

  • 200 milliliters cow's milk
  • 2 egg yolks
  • 2 tablespoons sugar
  • 2 tablespoons matcha, green tea powder
  • 100 milliliters water, warm
  • 200 milliliters liquid whipping cream, thick, slightly whipped

  • Put the milk in a saucepan and heat it to boiling point. Then whisk the egg yolks with the sugar.
  • Pour the milk over the egg mixture, stirring constantly, return the mixture to the saucepan, and stir well.
  • Heat the cream over low heat, stirring constantly, for 3 minutes or until it thickens enough to coat the back of a spoon. Remove from heat and let it cool.
  • In a bowl, dissolve the tea in the hot water, pour it over the cooled cream, and stir well. Fold in the whipped cream.
  • Place the mixture in the freezer for 2 hours. Take it out and whisk it with a fork to break up any ice crystals that have formed. Return it to the freezer and leave it for another 2 hours. Whisk it again, put it back in the freezer, and let it sit overnight or until it has solidified.
